1️⃣ Sugar Cookies:
- 2 cups all-purpose flour (240g)
- ½ tsp salt (2g)
- ½ tsp baking powder (1.5g)
- ½ cup unsalted butter, softened (113g)
- ½ cup granulated sugar (100g)
- 1 large egg
- 1 tsp vanilla extract (4g)
Steps:
- Whisk flour, salt, and baking powder.
- Beat butter and sugar until fluffy (2 min).
- Mix in egg and vanilla.
- Add dry ingredients gradually; mix into dough.
- Divide dough, shape into disks, wrap, and chill 2+ hours (up to 2 days).
- If chilled over 2 hours, let sit 15–30 min at room temp before rolling.
- Preheat oven to 375°F (190°C).
- Roll dough ¼” thick. Cut with 2½” cutters. Re-roll scraps.
- Place 1″ apart on parchment-lined sheets. Bake 10–12 min until edges are golden.
- Cool briefly on pan, then transfer to rack. Decorate if desired.
2️⃣ Icing:
- 1.5 cups powdered sugar (180g)
- 2 tbsp warm water (30mL)
- 1/2 tbsp light corn syrup (10g)
- 1/8 tsp vanilla or almond extract
- Gel food coloring (optional)
Steps:
- Add powdered sugar to a bowl.
- In another bowl, mix warm water, corn syrup, and extract until smooth.
- Pour liquid into sugar. Stir until thick and smooth.
- Icing should drip slowly and melt back in ~12 seconds.
- Too thick? Add water by the drop. Too thin? Add sugar by the teaspoon.
- Use immediately or cover and store up to 1 day. Stir and adjust before using.
3️⃣ Frosting:
- ½ cup unsalted butter, softened (113g)
- 2 to 3 cups powdered sugar (240-360g)
- 2 tbsp milk (30ml)
- 1 tsp vanilla extract (5ml)
- ½ tsp salt (3g)
Steps:
- Beat butter until smooth and creamy.
- Add powdered sugar gradually, mixing on low to avoid a sugar cloud.
- Add milk, vanilla, and salt, then beat on medium-high until light and fluffy.
- Add more milk (1 tsp at a time) to thin, or more sugar to thicken.
