Four delicious recipes to try this weekend 

 Waffles:

– 2 cups plain flour (240g)
– 1 tbsp baking powder (12g)
– ½ tsp salt (3g)
– 2 tbsp sugar (25g)
– 2 large eggs, separated
– 1⅔ cups milk (400ml)
– ⅓ cup melted butter or oil (75ml)
– 1 tsp vanilla extract (5ml)

Steps:

1. Preheat waffle maker to 400°F (200°C).
2. Mix together ingredients except egg whites.
3. Beat egg whites to stiff peaks; fold into batter.
4. Pour into the waffle maker and cook 3–5 minutes until golden and crisp.
5. Serve with syrup, fruit, or ice cream.

– 1 cup plain flour (120g)
– ½ cup milk (120ml)
– ½ cup water (120ml)
– ½ tsp salt (3g)
– 2½ tbsp sugar (30g)
– 2 tbsp butter (30g)
– Oil for frying
– Castor sugar (for coating)
– Melted chocolate (for dipping)

Steps:

1. Boil milk, water, sugar, salt, and butter.
2. Remove from heat, stir in flour until dough forms.
3. Transfer to a piping bag with a large star tip. Rest 2 min.
4. Heat oil in a deep pan. Pipe dough into hot oil, cutting with scissors.
5. Fry until golden brown. Drain on paper towels.
6. Roll in sugar.

– 1½ tsp vanilla extract (7ml)

Steps:

1. Mix flour, baking powder, sugar, and salt. Set aside.
2. Whisk egg, milk, butter, and vanilla.
3. Combine gently; lumps are okay.
4. Heat a greased pan over medium-low.
5. Drop 1 tbsp batter per pancake.
6. Cook 1–2 min until bubbles form; flip.
7. Cook 30–60 sec until golden.
8. Serve with syrup, fruit, or chocolate.

– 1 cup plain flour (120g)
– ½ tsp salt (3g)
– 2 large eggs (room temp)
– 1 cup warm milk (240ml)
– 3 tbsp melted butter (45g)
– ¼ cup water (60ml)
– 2 tbsp oil (30ml, for pan)

Steps:

1. Whisk flour and salt.
2. Add eggs, slowly whisk in warm milk.
3. Stir in melted butter and water until smooth.
4. Heat a greased pan over medium heat.
5. Swirl a thin layer of batter to coat the pan.
6. Cook 1–2 minutes until edges lift; flip and cook 30–40 sec.
7. Serve warm with chocolate, fruit, or honey.
