1.Chili Oil
Ingredients:
- 8–10 garlic cloves, minced or finely chopped
- 3 tbsp red chili flakes (adjust to taste)
- ½ cup neutral oil (avocado, sunflower, or vegetable)
Optional:
- Pinch of salt
- Sesame seeds
- Sichuan peppercorns
INSTRUCTIONS
- Heat the oil: Add the oil to a small saucepan and warm over medium heat until shimmering but not smoking.
- Fry garlic: Stir in garlic and cook for 3–4 minutes until golden brown, being careful not to burn.
- Pour over chili flakes: Place chili flakes in a heatproof bowl. Pour the hot garlic oil over them and stir. Let cool completely before transferring to a jar.
2.Gyoza Sauce
INGREDIENTS
- 1 tbsp soy sauce
- 1 tsp rice wine vinegar
- 1 tsp sesame oil
- chilli flakes to taste

- In a small dipping bowl add your soy sauce, rice wine vinegar, sesame oil and chilli flakes.

3.Thai Peanut Sauce
Ingredients
- 1/2 cup peanut butter (creamy or crunchy)
- 1/4 cup low-sodium soy sauce
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon honey or maple syrup
- 1/4 cup full-fat coconut milk
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (adjust to taste)
Instructions
- Gather all ingredients and a medium mixing bowl.
- In the bowl, combine peanut butter, soy sauce, lime juice, honey (or maple syrup), coconut milk, garlic powder, and red pepper flakes.
- Whisk until smooth and well blended.

4.Sweet Chili Sauce
Ingredients
For the Sweet Chili Sauce Base
- 4-5 cloves Garlic finely minced
- 2-4 Fresh red chilies
- 1 inch Fresh ginger peeled and finely minced
- 1 cup Water
- 1/2 cup Rice vinegar
- 1/2 cup Granulated sugar
- 1 tbsp Fish sauce
For the Cornstarch Slurry - 1.5 tbsp Cornstarch
- 2 tbsp Cold water
Preparation
- Finely mince the garlic cloves, red chilies, and fresh ginger. For a milder sauce, you may remove the seeds and white membranes from the chilies before mincing.
Cooking the Sauce - In a small saucepan, combine 1 cup of water, rice vinegar, granulated sugar, and fish sauce. Add the minced garlic, chilies, and ginger to the saucepan.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally to ensure the sugar dissolves completely. Once boiling, reduce the heat to low and simmer for 10-12 minutes, allowing the flavors to meld and the liquid to slightly reduce.
- While the sauce simmers, prepare the cornstarch slurry: In a small separate bowl, whisk together the cornstarch and 2 tablespoons of cold water until a smooth, lump-free paste forms.
- Slowly pour the cornstarch slurry into the simmering sauce in the saucepan, whisking constantly to prevent any lumps from forming.
- Continue to cook and whisk the sauce over low heat for another 5-8 minutes, or until the sauce thickens to your desired consistency. It should be thick enough to lightly coat the back of a spoon.
Cooling and Storage - Remove the thickened sauce from the heat and let it cool completely at room temperature. The sauce will continue to thicken further as it cools.
